Baked Salmon and broccoli no-fuss dinner

Ingredients:

1 head of broccoli, cut into florets

2 tosps olive oil

2 salmon fillets

3 cloves of garlic, sliced

2 spring onions, chopped

2cm of ginger, grated

1 red chilli, sliced

1 lime or lemon, juiced

1 handful of parsley or coriander (if preferred), chopped A handful of peanuts, or flaked almonds as preferred

Method:

  1. Preheat the oven to 180C fan/ 200C. Put the broccoli florets onto a roasting tray and sprinkle over with 1 tosp of the olive oil and some salt & pepper and toss well to mix.
  2. Place the salmon fillets along with the broccoli florets and drizzle some more olive oil over the salmon, cover the tray with baking paper and place in the oven. Bake for around 20 minutes or until the salmon is cooked.
  3. In a bowl, mix the garlic, spring onions, ginger and red chilli and mix with 2 more tablespoons of olive oil and juice of 1 lime or lemon. Add the herbs, peanuts or flaked almonds and mix well.
  4. Remove the salmon and broccoli from the oven and generously coat the dish with the ginger/chilli dressing.
