An easy recipe for a gluten free loaf of bread which simply requires mixing all the ingredients together. I add rosemary to mine for a bit of extra flavour and goodness. Did you know dried herbs contain higher levels of antioxidants than fresh ones do? I also like to add some seeds to give a bit of extra protein and heathy fats.
Ingredients
- 400g greek yoghurt or cottage cheese
- 3 eggs
- 200g almond or buckwheat flour
- 50g sunflower seeds
- 50g pumpkin seeds
- 1 sprig of rosemary leaves
- 1 tsp baking powder
- 1 pinch of salt
Method
1. Pre-heat the oven to 180C and grease a loaf tin with a knob of butter or light olive oil.
2. Mix all ingredients together in a large mixing bowl with a spoon or by hand if you prefer until doughy in texture.
3. Place the mixture into the loaf tin and even out as much as possible using a spatula.
4. Place in the oven and bake for 45 minutes - 1 hour until golden on top and cooked through.
5. Take out and cool on a rack. Slice to serve and enjoy!
